湯在廣東菜的烹調中,可以說是一種藝術,尤其是煲湯,非常講究,材料要待水滾才能放進去,否則湯料會黏煲底,更切勿中途加水;而且火候也很重要,「明火」也就是直接用水來煲,要煲三、四小時,中間不能把火關掉,使湯不斷在滾。這樣才能煲出靚湯來。

In the Kwangtung cuisine, soup preparation becomes an art. The so called "Cantonese" soup puts great emphasis in the ingredients, the amount of water, the right heat and the long simmering time. The ingredients should be added into boiling water to prevent them sticking to the bottom of the pot. The soup should be left to simmer for three to four hours without further adding water.
